Dal Tadka Recipe
Ingredients:
- 1 cup toor dal or masoor dal
- 3 cups water
- 1 medium tomato, chopped
- 1 small onion, finely chopped
- 4 garlic cloves, minced
- 1 inch ginger, grated
- 1 teaspoon turmeric
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- Salt to taste
- 2 tablespoons ghee or oil
- Fresh coriander for garnish
- Squeeze of lemon juice
Method
Step 1: Wash the dal 2 to 3 times until the water runs clear. Pressure cook with 3 cups of water, turmeric, and salt for 3 to 4 whistles until soft and creamy. If you do not have a pressure cooker, simmer in a covered pot for 30 to 40 minutes.
Step 2: Heat ghee in a separate pan. Add cumin seeds and let them splutter. Add onions and sauté until golden. Add garlic and ginger and cook for 1 minute. Add tomatoes and cook until they break down into a thick masala, about 5 minutes. Add coriander powder and mix well.
Step 3: Pour this tadka (tempering) over the cooked dal. Stir to combine. Adjust consistency with water if needed. Taste and adjust salt. Finish with a squeeze of fresh lemon juice and garnish generously with coriander leaves.
Step 4: Serve hot over steamed rice. Add a dollop of ghee on top for restaurant-style richness.
Tips for Perfect Dal
- Always finish with a squeeze of lemon — it brightens the entire dish.
- The second tempering (double tadka) makes a big difference — once before cooking and once at the end with ghee, dried red chilli, and cumin.
- If your dal is too thick, add hot water and stir. Never add cold water.
- Ghee in the tadka is non-negotiable for authentic flavour.
